The Great Dutch Bake Off

 

Join the baking livestream!

Give someone else a piece of joy on April 29th by surprising him or her with a delicious cake!
During the Night of the Volunteer you can join the winner of the Great Dutch Bake Off, Elizabeth Lopez, for a baking livestream. From the comfort of your home you will bake a carrot cake. The livestream starts at 7 pm and lasts until at last 9 pm.

You can join with your computer from anywhere! You make your cake during the workshop via the livestream. The next day you bring it to someone in need: your grandmother, neighbor or an elderly home down the street.

Summery carrot cake

Necessities:
1 kitchen scale
Two 9-inch (22 cm) pans or Three 8-inch (20 cm) pans (cake tins)
Mixing bowl
Blender

Ingredients:
1 ¼ cups (295 ml) of sunflower oil
2 cups (400 grams) of white granulated sugar
3 eggs at room temperature (if the eggs are small add 1 extra egg)
2 cups (272 grams) all purpose flour
1 teaspoon of baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon of salt
1 teaspoon of cinnamon
½ teaspoon of nutmeg
½ teaspoon of cloves
½ teaspoon of ginger powder
2 cups (180 grams) of grated carrots
1 cup (90 grams) of shredded coconut
1 cup (90 grams) of chopped nuts of choice (optional)
1 teaspoon of vanilla
2 (organic) juicing oranges
1 cup (90 grams) pureed pineapple, not drained! (use the pineapple on juice, not on syrup)

For the cheese cream:
2 packages of XL Philadelphia cream cheese
1 teaspoon of vanilla
1 jar of white chocolate spread
Top with toasted pecans or coconut, if desired

Instructions:
Preheat the oven to 180C degrees.

Make sure you weigh and prepare all ingredients in advance.
In a large bowl, sift the flour, salt, baking powder, baking soda and seasoning powders. Set aside.
In another bowl, mix together the sugar, oil, eggs and vanilla. Beat until everything is well combined. Add the dry ingredients and mix well.
Then add the zest of 1 orange and the juice of half an orange. Then add the pineapple, carrot and nuts and stack this through.
